Here are the complete recipes for each of the three Burns Night menus, including whisky pairings. All are designed for home cooking (serving 4-6) but scalable for up to 50 people—just multiply ingredients proportionally and use larger pots/oven trays. Prep ahead where possible for larger groups.

**Variant 1: Classic Traditional**

**Starter: Cock-a-Leekie Soup** (Serves 4-6; hearty chicken and leek broth with prunes)

- 1 medium chicken (or 1.5kg chicken pieces)
- 4-6 leeks, sliced (reserve greens)
- 12-15 prunes (stoned)
- 2 carrots, chopped

- 2 bay leaves, thyme sprigs

**Method**

1. Place chicken in a large pot with water to cover (about 2-3 litres). Add carrots, celery, bay leaves, thyme, and leek greens. Simmer 1-1.5 hours until chicken is cooked.
2. Remove chicken, shred meat, discard bones/skin. Strain broth.
3. Add sliced leeks and prunes to broth; simmer 20-30 mins. Return shredded chicken. Season. **For 50:** Use 2-3 whole chickens or 10kg pieces; large stockpots. **Whisky Pairing:** Glenfiddich 12 (light and fruity).

**Main: Haggis, Neeps, and Tatties**

- 1kg potatoes (tatties), peeled/chopped
- Butter, milk, salt/pepper

**Method**
